I have the recipe for the easiest cinnamon sugar muffins and they are so DELICIOUS. Seriously, my kids LOVED them. They wanted a second muffin right away, and then they wanted a muffin with their lunch, and then a muffin as their snack after nap. I said no, of course, but it just shows how great these muffins really are. Plus, they are pretty. See that shiny glaze on top? Almost too pretty to eat. 😉
Ingredients:
Batter:
1 1/2 cups flour
1/2 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon ground nutmeg
1/2 teaspoon cinnamon
1 egg
1/2 cup milk
1/3 cup melted butter
Glaze:
1/3 cup melted butter
1/4 cup sugar
1 teaspoon cinnamon
Directions:
- Preheat your oven to 350 degrees F and line muffin tray with liners.
- Stir together flour, sugar, baking powder, nutmeg, cinnamon, and salt.
- In a separate, smaller bowl, mix together the egg, milk, and melted butter.
- Pour the wet mixture into the dry ingredients and stir together. The batter will be lumpy but that’s okay, it’s supposed to be.
- Fill the muffin cups with a little less than 1/4 cup of batter. There should be enough batter to fill 12 muffin cups, but it depends on how much batter you pour into each muffin cup.
- Bake for 20 minutes.
- While the muffins are baking, make the glaze by melting the butter and then adding the sugar and cinnamon and stirring until well combined.
- When the muffins are finished baking, dip the tops of each muffin into the glaze. Once all have been dipped once, dip them a second time.
These muffins are delicious warm but just as yummy cooled. If the muffins aren’t all eaten right away, put them in a covered container and store them in the refrigerator.
