Easy Cinnamon Sugar Muffins

I have the recipe for the easiest cinnamon sugar muffins and they are so DELICIOUS. Seriously, my kids LOVED them. They wanted a second muffin right away, and then they wanted a muffin with their lunch, and then a muffin as their snack after nap. I said no, of course, but it just shows how great these muffins really are. Plus, they are pretty. See that shiny glaze on top? Almost too pretty to eat. 😉

Ingredients:

Batter:

1 1/2 cups flour
1/2 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon ground nutmeg
1/2 teaspoon cinnamon
1 egg
1/2 cup milk
1/3 cup melted butter

Glaze:

1/3 cup melted butter
1/4 cup sugar
1 teaspoon cinnamon

Directions:

  1. Preheat your oven to 350 degrees F and line muffin tray with liners.
  2. Stir together flour, sugar, baking powder, nutmeg, cinnamon, and salt.
  3. In a separate, smaller bowl, mix together the egg, milk, and melted butter.
  4. Pour the wet mixture into the dry ingredients and stir together. The batter will be lumpy but that’s okay, it’s supposed to be. 
  5. Fill the muffin cups with a little less than 1/4 cup of batter. There should be enough batter to fill 12 muffin cups, but it depends on how much batter you pour into each muffin cup. 
  6. Bake for 20 minutes.
  7. While the muffins are baking, make the glaze by melting the butter and then adding the sugar and cinnamon and stirring until well combined.
  8. When the muffins are finished baking, dip the tops of each muffin into the glaze. Once all have been dipped once, dip them a second time.

These muffins are delicious warm but just as yummy cooled. If the muffins aren’t all eaten right away, put them in a covered container and store them in the refrigerator.
